Containing the perfect mix of pink bourbon, gesha, sidra, and wush wush, this coffee provides an incredibly balanced, fruit-forward cup that is reminiscent of pomegranate, grapefruit and florals. At El Ubérrimo (Francy’s farm), sustainable farming methods are leveraged to preserve soil microbial life, with practices such as cover cropping and mulching being favoured over the use of agrochemicals. The care that Francy’s puts into her farming practices is reflected in all of the best ways with this coffee. It is easily one of our favourite coffees of the year, and we hope you will agree.
Similar to her pink bourbon offering, each of the varieties within this blend are harvested about 25 to 30 days late to allow for extended maturation of the cherries. After harvest, the cherries undergo a 60-hour dry fermentation in a clean and cool environment before being floated for quality. After pulping, the seeds are then transferred to tanks for a second waterless fermentation for about 2 to 3 days, subject to the temperature and sugar (Brix) levels. After a single rinse, the coffee enters the drying process, starting under a tarp for 2 days, followed by a mechanical dryer for about 18 days, and culminated by a final dry in the shade until the optimal moisture content is achieved.
